پژوهش های انجام شده در امریکا نشان داد که زعفران می تواند به درمان بیماری ام اس کمک کند.
زعفران حاوی ترکیب فعالی به نام کروسین است که از سلول‌های مغزی در برابر بیماری ام اس محافظت می‌کند.

این ماده در واقع از آسیب دیدن سلول‌هایی که غلاف میلین را در مغز تولید می‌کنند، جلوگیری می‌نماید. میلین لایه‌ای است که مانند عایقی محافظ در اطراف نورون‌ها (سلول‌های مغزی) قرار دارد.
بیماری ام اس در اثر التهاب سلول‌های مغزی ایجاد می‌شود. در حقیقت در این بیماری سلول‌های مغزی این لایه محافظتی خود را از دست می‌دهند.

نتایج این پژوهش که در نشریه ایمونولوژی امریکا به چاپ رسید، امیدهای تازه ای را در جهت تولید داروهای جدید برای درمان بیماری ام اس به همراه داشته است.

نقش زعفران در سلامتی انسان
یکی از مهم‌ترین خواص این ماده درمان افسردگی و تسکین درد است.
دکتر مطهری متخصص تغذیه گفت: زعفران دارای بو و طمعی تلخ است. نوشیدن چای زعفران باعث هضم غذا می شود، اثر مسکن درد دارد و باعث تحریک اعصاب می شود.
وی ادامه داد: علاوه بر خواص گفته شده، زعفران خون‌ساز است و گردش خون را آسان می‌کند. به علاوه مصرف زعفران خونریزی‌های پس از زایمان را از بین می برد و گردش خون را آسان می کند.
وی همچنین خاطر نشان کرد: در زعفران ترکیبی به نام کروسین وجود دارد که می‌تواند آسیب وارده به سلول‌های غلاف میلین را خنثی کند.
وی در پایان گفت: البته نباید در مصرف آن زیاده روی کرد، چون زعفران دارای عنصری سمی به نام سافر‌انال می باشد که باعث خونریزی داخلی بدن خواهد شد، البته این اتفاق در صورتی می افتد که در روز بیش از ۲۰ گرم زعفران مصرف کنیم ولی در مقادیر کم ضرری نداشته و حتی خواص ضد سرطانی فوق العاده ای خواهد داشت.
