آیا سوپ های آماده برای مصرف مفیدند؟


سلامت نیوز: مونوسدیم گلوتامات معروف ترین تشدیدكننده طعم و مزه غذاهای فرآوری شده از جمله سوپ‌های آماده پودری است و طبق یافته‌های علمی پژوهشگران ژاپنی، مصرف بیش از حد و مستمر محصولات حاوی این افزودنی، در برخی افراد موجب حساسیت شده و می‌تواند به شبكیه چشم آسیب بزند و موجب بروز سردرد، تنگی نفس، تهوع و احساس سوزش در عضلات شود و احتمال تشدید آسم، حملات میگرن و اختلال در ریتم ضربان قلب را افزایش دهد.

گفتنی است مونوسدیم گلوتامات معروف ترین تشدیدكننده طعم و مزه غذاهای فرآوری شده از جمله سوپ‌های آماده پودری است و طبق یافته‌های علمی پژوهشگران ژاپنی، مصرف بیش از حد و مستمر محصولات حاوی این افزودنی، در برخی افراد موجب حساسیت شده و می‌تواند به شبكیه چشم آسیب بزند و موجب بروز سردرد، تنگی نفس، تهوع و احساس سوزش در عضلات شود و احتمال تشدید آسم، حملات میگرن و اختلال در ریتم ضربان قلب را افزایش دهد. دکتر نیستانی در پاسخ به اینکه آیا استفاده از سوپ های آماده با توجه به فصل سرد و شیوع سرماخوردگی مناسب است و آیا می تواند به اندازه سوپ های خانگی برای سرماخورده ها مفید واقع شود گفت:« سوپی که در منزل تهیه می شود ترکیبات آن در اختیار خودمان است ولی این مسئله در مورد سوپ های آماده صدق نمی کند. یادمان باشد سوپ یک غذای آبکی به عنوان پیش غذا است لذا سهم عمده مواد مغذی و کالری دریافتی از غذای اصلی تامین می شود اما در مورد یک فرد بیمار بنا را بر این داریم که از طریق سوپ سهم عمده مواد مغذی و کالری را به وی برسانیم بنابراین قطعا پیشنهاد ما این است که اگر سوپ در منزل تهیه شود کارایی بهتری برای بیماران سرماخورده خواهد داشت.» وی افزود:« این سوال برای بسیاری از مصرف کنندگان سوپ های آماده وجود دارد که آیا به هر مقدار که محصولات حاوی این نوع افزودنی را مصرف کنند برای آنها مضر است که باید گفت علم می گوید در صورتی که این محصولات را در حد ضرورت استفاده کنند و در مصرف آن زیاده روی نکنند مشکلی ایجاد نمی کند.» دانشيار انستيتو تحقيقات تغذيه كشور ادامه داد:« برخی از افزودنی ها دارای ارزش تغذیه ای هستند اما اینکه گفته می شود اغلب تولیدکنندگان سوپ های آماده از نوعی افزودنی به به نام «مونوسدیم گلوتامات» استفاده می کنند باید گفت که این محصولات نیاز به آزمایش دارند و قانونا اگر کارخانه ای از این نوع افزودنی در تولید سوپ های آماده استفاده می کند باید بر روی برچسب محصول خود آن را قید کند.» وی در پاسخ به اینکه آیا از افزودنی های مضر در تهیه و تولید سوپ های آماده استفاده می شود، گفت:« بسیاری از تولیدکنندگان سوپ های آماده برای طعم و قوام این محصولات از افزودنی ها استفاده می کنند و در واقع محصولات خود را مشتری پسند می کنند اما باید گفت که افزودنی ها ضرورتا بد نیستند و در صورتی که به مقدار مجاز از آن در تهیه محصول استفاده کرده باشند عوارضی برای بدن نخواهند داشت.» وی در پاسخ به اینکه آیا سوپ های آماده دارای ارزش غذایی هستند گفت:« سوپ های آماده به درجاتی دارای ارزش غذایی هستند و دست کم مقدار پروتئین و سبزیجات و فیبر و عناصر موجود در آن قابل استفاده است.»
این متخصص تغذیه در پاسخ به اینکه آیا ادعای تولیدکنندگان سوپ های آماده درباره اینکه از مواد نگهدارنده درتولید آن استفاده نمی کنند صحت دارد، گفت:« سوپ های آماده به دلیل اینکه معمولا به شکل پودر تهیه می شوند نیازی به نگهدارنده ندارند.» دکتر تیرنگ نیستانی در گفت و گو با خبرنگار سلامت نیوز درباره سوپ های آماده گفت:« بین انواع محصولات مختلف کارخانه های تولیدکننده سوپ های آماده می تواند از نظر کیفیت فرق وجود داشته باشد. اگر این محصولات را از نظر ارزش غذایی با سوپ های خانگی مقایسه کنیم باید گفت که در ایران معمولا سوپ های خانگی بسیار غلیظ آماده می شود و انواع مواد غذایی شامل سبزیجات، حبوبات، مرغ یا گوشت در پخت آن به کار رفته است لذا این سوپ ها را به همین دلیل نمی توان به عنوان پیش غذا مصرف کرد بلکه سوپ های خانگی ایرانی خود یک غذای کامل محسوب می شوند.» یک متخصص تغذيه و رژيم درماني با بیان اینکه:فرد بیمار باید از طریق سوپ سهم عمده مواد مغذی و کالری را دریافت کند و اگر سوپ در منزل تهیه شود کارایی بهتری برای بیماران سرماخورده خواهد داشت، تاکید کرد: بسیاری از تولیدکنندگان سوپ های آماده برای طعم و قوام این محصولات از افزودنی ها استفاده می کنند در صورتی که در مصرف این محصولات زیاده روی نشود مشکلی ایجاد نمی کند.
