باورهای درست و نادرست درباره برخی مواد غذایی
در هر حوزه ای باورهایی در بین مردم شکل می گیرد که درست یا غلط، به باورهای رایجی تبدیل می شوند و معمولاً تغییر این باورها نیز بسیار دشوار است. در حوزه تغذیه نیز باورهایی وجود دارند که بعضاً پیش زمینه های علمی نیز داشته اند، ولی با گذشت زمان و پیشرفت علم تغییر کرده اند، اما همچنان بین عموم مردم به عنوان باور درست تلقی می شوند. در این مقاله قصد داریم شما را با پنج مورد از این باورهای رایج آشنا کنیم.
قهوه سرطان زا است!
در سال 1970 محققان اعلام کردند که کافئین باعث تشکیل کیست هایی در سینه می شود. سپس در سال 1981 پژوهشی که در دانشگاه هاروارد انجام شد، حاکی از این بود که میزان سرطان های مربوط به لوزالمعده در بین قهوه خورها بیشتر است. اما اندکی بعد پژوهش های جدی بر روی خطر ابتلا به سرطان در میان قهوه خورها انجام گرفت که نشان داد این باور درست نیست. حتی در برخی موارد نتایج کاملاً برعکس پژوهش های اولیه بود. بررسی 17 پژوهش که بین سال های 1990 و 2003 انجام شده بودند، نشان داد ابتلا به سرطان کولون در بین افرادی که قهوه می نوشند 24 درصد کمتر است.

مصرف تخم مرغ خطرناک است!
محققان تغذیه سال ها بر این عقیده بودند که مصرف تخم مرغ خطرناک است، زیرا این ماده غذایی کلسترول محسوب می شود و از آنجایی که کلسترول، رگ ها را مسدود می کند، بنابراین خوردن تخم مرغ خطر حملات قلبی و سکته مغزی را افزایش می دهد. اما این باور نیز درست نیست. پژوهشی در ابتدا نشان داده بود که میزان کلسترول خون، خطر بیماری های قلبی عروقی را بالا می برد، اما با این حال، این پژوهش هیچ ارتباطی بین مصرف تخم مرغ و ابتلا به بیماری های قلبی عروقی نیافته بود. واقعیت این است که تنها 25 درصد کلسترول خون مستقیماً از تغذیه به وجود می آید و 75 درصد دیگر از کبد تولید می شود. تخم مرغ تقریباً فاقد این چربی های اشباع شده و سرشار از مواد مغذی ای هست که اثرات مضر کلسترول بد را از بین می برد. این ماده غذایی همچنین دارای اسیدفولیک و ویتامین های گروه B و مواد معدنی می باشد.

مواد غذایی فاقد چربی یا کم چرب برای سلامتی بهترند
در خصوص محصولات لبنی و مواد غذایی دیگری مثل گوشت قرمز، اصل بر این است که هرچه این مواد غذایی چربی کمتری داشته باشند، بهتر است. اما این اصل، مطلق نیست. سس سالادی که با روغن زیتون و سرکه سیب تهیه می شود، حاوی چربی های غیر اشباع مونو است که از بیماری های قلبی و ... پیشگیری می کند. یک پژوهش جدید نشان داده وقتی روغن را حذف کنیم، بدن همیار اصلی خود برای مقابله با بیماری ها را از دست می دهد، چون سیستم گوارش بدون روغن نمی تواند بیشتر مواد مغذی سبزیجات را جذب کند.

میوه و سبزیجات خام بهتر هستند
باور این که همه مواد مغذی در حین پخت از بین می رود، درست نیست. طرفداران مواد غذایی خام معتقدند که گرما باعث می شود آنزیم های مواد غذایی که آنها را قابل هضم تر می کند، از بین برود. درست است، اما پخت مواد غذایی باعث می شود که فیبرهای آن متلاشی شده و راحت تر جذب بدن شود. وانگهی محققان ثابت کرده اند پخت باعث می شود که میزان برخی از عناصر موجود در میوه و سبزیجات افزایش یابد. به عنوان مثال آنتی اکسیدان لیکوپن سس کچاپ 5 الی 6 برابر بیشتر از گوجه فرنگی خام است و برای مقابله با بیماری هایی مثل سرطان پروستات مؤثرتر است.

آجیل باعث چاقی می شود
بدون شک همه می دانند که آجیل حاوی چربی است، اما باید بدانید که این چربی ها از گروه چربی های خوب هستند. به عنوان مثال، بادام زمینی حاوی سه الی چهار برابر چربی های غیر اشباع مونو است که برای سلامت قلب از چربی های اشباع شده مفیدتر است. بر اساس نتایج یک پژوهش جدید مصرف آجیل در چارچوب یک رژیم غذایی سالم حتی می تواند به لاغری نیز کمک کند. محققان بر این عقیده اند که چربی های آجیل باعث می شوند مصرف کننده احساس خوب و خرسندی بکند. از طرف دیگر پروتئین های موجود در آجیل، کالری ها را می سوزاند. باید بدانید که مصرف مواد غذایی سرشار از پروتئین، هورمونی را آزاد می کند که گرسنگی را کاهش می دهد. البته توجه داشته باشید که در مصرف آجیل و یا هر ماده غذایی دیگر افراط نکنید.
