غذای محبوب خود را خورده‌ایم و قاعدتا باید سیر شده باشیم، اما همچنان نمی‌توانیم از خوردن دست بکشیم. محققین در جریان پژوهشی جدید توانسته‌اند پاسخی برای این پدیده پیدا کنند.


این یک معماست که چرا انسان با وجود پشت سر گذاشتن دوران تکامل، با قدمتی حدود چهار و نیم میلیارد سال، همچنان قادر نیست از پرخوری پرهیز کند.

چرا در انسان‌ها مانند حیوانات سیستمی وجود ندارد که ترمزی بر غذا خوردن باشد و باعث شود پس از این که سیر می‌شوند و به اندازه کافی بدنشان مواد غذایی دریافت می‌کند، دیگر میلی به غذا خوردن نداشته باشند؟

هر فردی با توجه به سلیقه شخصی و همچنین فرهنگ غذائی کشور خود، در مقابل غذاهای محبوبش کنترلی روی معده خود ندارد. برای ایتالیائی‌ها احتمالا پیتزا و اسپاگتی، برای آلمانی‌ها شنیسل و سوسیس و برای ایرانی‌ها غذاهایی مانند قورمه‌سبزی و فسنجان این ویژگی "سیری‌ناپذیری" را بیدار می‌کنند.

محققین پدیده‌ خوردن فراتر از مرز سیری را "گرسنگی هدونیستی" یا "گرسنگی لذت‌طلبانه" می‌نامند، به این معنی که اشتها دیگر تنها ابزاری برای رفع نیاز بدن به کالری نیست، بلکه بیشتر در خدمت آرام کردن حرص و ولع نسبت به غذای مورد علاقه فرد است.

معمای "گرسنگی لذت‌طلبانه"

برای یافتن پاسخی برای تمایل انسان به پرخوری، محققین ایتالیائی پژوهشی در این زمینه انجام داده‌اند. پالمیرو مونته‌لئونه (Palmiero Monteleone) از دانشگاه ناپل و تیم پژوهشی او نتایج این بررسی را در مجله علمی
Clinical Endocrinology & Metabolism منتشر کرده‌اند.

آنها در این پژوهش کوچک برای هشت داوطلب ۲۱ ساله غذای مورد علاقه‌شان را تهیه کردند. در مرحله دوم داوطلبان بایستی غذایی نه چندان باب میلشان را می‌خوردند. در عین حال از داوطلبان قبل، بعد و در حین خوردن غذا خون گرفته شد.

به گزارش دویچه‌وله، محققین قصد داشتند از این طریق میزان هورمون "گرلین" در خون که محرک اشتها است را اندازه بگیرند. آنها به دنبال پیدا کردن معمای مکانیسمی بودند که غریزه‌ بقای انسان را تبدیل به کششی برای ارضا کردن لذت‌طلبی در انسان می‌کند.

از کار افتادن "دکمه سیری" در بدن

نهایتا نتایج این بررسی نشان داد که هورمون "گرلین" خود عامل اصلی پدیده‌ "گرسنگی لذت‌طلبانه" است. هنگامی که ما به غذای مورد علاقه‌ خود فکر می‌کنیم و طبیعتا هنگام میل کردن این غذا، میزان هورمون "گرلین" در خون بالا می‌رود. به عبارتی دیگر غذای محبوب ما دکمه سیری را در بدن از کار می‌اندازد.

کشف این مکانیسم می‌تواند به یافتن راه‌حلی برای رهایی یافتن از معضل چاقی کمک کند. اگر محققین موفق شوند مدارهای عصبی‌ای که در مغز مسئول تنظیم عملکردهای گرلین هستند را شناسایی کنند، آنگاه شاید بتوان پرخوری را از زندگی انسان‌ها حذف کرد.
