icon_questionشكلات‌های كاكائویی یكی از لوكس‌ترین شیرینی‌هایی است كه این روزها انواع و اقسام آن را در قنادی می‌بینیم.

شكلات تلخ، سفید، شیری، مغزدار، طعم‌دار و میوه‌ای در گروه شكلات‌های پرفروشی است كه برای پذیرایی عید انتخاب می‌شود.

اما چه نوع شكلاتی بهتر است؟ چرا برخی شكلات‌ها گران و برخی ارزان‌قیمت است؟ چگونه می‌توان یك شكلات مرغوب را تشخیص داد؟ آیا شكلات برای سلامتی مضر است؟

هر شیرینی كوچكی كه در تركیب آن كاكائو به كار رفته باشد، شكلات نام دارد. در صنعت برای تهیه انواع شكلات از درصدهای مختلف پودر كاكائو، كره كاكائو، شكر، شیرخشك و مواد نگهدارنده و طعم‌دهنده استفاده می‌شود.

البته این را بدانید كه در همه شكلات‌ها از كره كاكائو استفاده نمی‌شود. كره كاكائو به دلیل قیمت بالایی كه دارد، دردرصدهای مختلف و در شكلات‌های گران‌قیمت استفاده می‌شود.

شكلات‌هایی كه این روزها با قیمت‌هایی به صرفه عرضه می‌شود، اغلب حاوی روغن‌های گیاهی همچون روغن پالم است كه معادل یا جایگزین كره كاكائو شده‌ است.

شكلات‌هایی با طعم مختلف

شكلات تلخ: این شكلات رنگ قهوه‌ای تیره و طعم غنی و خوشایندی دارد و بهترین نوع شكلات است. شكلات تلخ در مقایسه با سایر شكلات ها، از كاكائوی بیشتری تهیه شده، بنابراین میزان پلی فنل و آنتی اكسیدان‌های آن كه نقش ضد سرطانی دارد، زیادتر و فواید تغذیه‌ای آن بیشتر است. این شكلات بر خلاف تصورعامه، حاوی شكر و چربی بوده و مصرف زیاد آن چاق‌كننده و برای دیابتی‌ها محدودیت دارد.

شكلات سفید: این شكلات ظاهری سفید رنگ داشته و اگر حاوی كره كاكائو باشد، هیچ نوع ماده رنگی در آن به كار نرفته و پایه اصلی آن از كره كاكائو تهیه شده است. شكلات سفید به دلیل درصد بالای چربی چندین برابر شكلات‌های دیگر كالری داشته و بسیار چاق‌كننده است.

شكلات شیری: این شكلات شیری رنگ و درصد شیرخشك آن بیشتر است. شیر افزوده شده به این شكلات به طور چشمگیر موجب افزایش ارزش تغذیه‌ای این محصول نمی‌شود و استفاده از آن برای افرادی كه به پروتئین شیر حساسیت دارند، منع مصرف دارد.

شكلات قهوه: یكی از خوشمزه‌ترین شكلات‌هاست. هنگامی كه آن را از بسته‌اش خارج می‌كنیم، بوی دلپذیر قهوه به مشام می‌رسد. این شكلات سرشار از كافئین بوده و مصرف به اندازه آن نشاط‌آور و رفع‌كننده خستگی است.البته این را بدانید كه مصرف بیش از حد آن اعتیادآور بوده و در صورت عدم دسترسی به آن خستگی و افسردگی در كسانی كه آن را زیاد مصرف می‌كنند، پدید می‌آید.

شكلات مغزدار: نسل جدیدی از شكلات است كه به رنگ تیره و سفید در بازار یافت می‌شود. مغزهای درسته فندق یا بادام در میان آن به كار رفته و موجب افزایش ارزش تغذیه‌ای محصول می‌شود. تنها عیب این شكلات آن است كه اگر مغز به كار رفته در آن تلخ باشد كام شما را شیرین نخواهد كرد.

شكلات میوه‌ای: یكی از بهترین شیرینی‌ها برای پذیرایی است. در این نوع شكلات، پوششی از كاكائو در اطراف میوه‌های خشك وجود دارد. این شیرینی به دلیل میزان كم كاكائو و شكر، در مقایسه با انواع شكلات‌ها كالری كمتری داشته و از طرفی میوه درون آن موجب افزایش ارزش تغذیه‌ای محصول می‌شود.

شكلات‌هایی كه از كره كاكائوی خالص تهیه شده باشد، در دمای 37 درجه سانتی‌گراد (دمای طبیعی بدن) هنگام در دست گرفتن ذوب می‌شود، اما شكلات‌هایی كه حاوی روغن‌های گیاهی است در دمای بالای 45 درجه سانتی‌گراد ذوب شده و حتی در داخل دهان نیز بسختی نرم می‌شود و معمولا دهان را چرب می‌كند. شكلات روكش بستنی و برخی ویفرها از این نوعند.

گول شكلات‌های رژیمی را نخورید

این روزها شكلات‌های زیادی را با نام رژیمی تبلیغ می‌كنند. در این نوع شكلات‌ها قند مصنوعی جایگزین شكر شده و مصرف آن به افراد دیابتی و چاق توصیه می‌شود، اما این‌گونه نیست.

فرض می‌كنیم شكر شكلات حذف شده است؛ اما آیا كره كاكائو، روغن‌های نباتی یا شیرخشكی كه به این محصول افزوده می‌شود و دو برابر كربوهیدرات‌ها (قندها) حاوی انرژی‌اند نیز حذف شده است؟ اگر هم قرار باشد این تركیبات حذف شود، دیگر جرمی از شكلات باقی نخواهد ماند بنابراین رژیمی بودن این محصول مفهوم دیگری دارد.این شكلات‌ها تنها برای افراد دیابتی كم وزنی كه به شكر حساسیت داشته و بدنشان قادر به ترشح انسولین نیست، آن هم با نظر پزشك مربوطه مناسب است.

وقتی شكلات دردسرساز می‌شود

شكلات با تمام ویژگی‌ها و فوایدی كه دارد، برای برخی افراد محدودیت مصرف دارد. افراد مبتلا به آلرژی‌های غذایی، افرادی كه زمینه ابتلا به كهیر و تبخال دارند، بیماران دچار فیبروكیستیك سینه، كسانی كه به زخم معده و ریفلاكس مبتلا هستند، كسانی كه از بی​خوابی رنج می‌برند، بیماران دچار سیروز كبدی، افراد دارای كلیه سنگ ساز و افراد دیابتی باید با نظر پزشك مربوطه این شیرینی لذیذ را میل كنند.

وای با خو اندن مطلبش هم دلم آب می افتد من معتاد به شکلات هستم هر از گاهی میرم تو ترک ولی دوباره روز از نو روزی از نو!!!!
