هشدار درباره وجود سم در غذاهای آماده به مصرف

یک عضو هیات علمی انستیتو تحقیقات تغذیه کشور تاکید کرد:آفلاتوکسین سمی سرطان زا است که در نتیجه مصرف غذاهای آلوده منجر به مسمومیت فرد می شود و در حرارت پاستوریزاسیون زنده می ماند و از بین نمی رود بنابراین در صورتی که در غذاهای آماده به مصرف از مواد آلوده استفاده شود با وجود حرارت دیدن، این سم ماندگار است.
به گزارش باشگاه خبرنگاران؛ دکتر خدیجه رحمانی، عضو هیات علمی انستیتو تحقیقات تغذیه کشور گفت:آفلاتوکسین سمی است که از رشد نوعی قارچ تولید می شود و اثرات سوئی بر بدن دارد و در نتیجه مصرف غذاهای آلوده منجر به مسمومیت فرد می شود.انواع متعددی از آفلاتوکسین وجود دارد که عبارتند از M1 و M2 و B2 و G1 و G2 و معمولا با نسبت های متفاوتی در برخی غذاها وجود دارد گرچه نوع غالب این سم B1 است و سمی ترین نوع است.
وی ادامه داد:آفلاتوکسین B1 سرطان زایی بالایی دارد و در مطالعات انسانی هم ارتباط مستقیمی بین آفلاتوکسین غذاها و شیوع سرطان کبد وجود دارد و به دلیل اینکه B1 بالاترین مسمومیت را دارد در اثر مجاورت طولانی موجب بروز سرطان کبد می شود به ویژه در افرادی که آنتی ژن هپاتیت B را دارند گرچه در افرادی که حامل هپاتیت Cهستند نیز این عامل خطر وجود دارد و این افراد گروه های آسیب پذیرتری هستند.
این عضو هیات علمی انستیتو تحقیقات تغذیه کشور گفت:گرچه سم M1 سرطان زایی کمتری دارد اما خطرناک بوده و منجر به مسمومیت کبد و در نهایت سرطان زایی کبد می شود و در حرارت پاستوریزاسیون نیز زنده می ماند و از بین نمی رود بنابراین در صورتی که در غذاهای آماده به مصرف از مواد آلوده مثل گردوی آلوده به سم آفلاتوکسین استفاده شود با وجود حرارت دیدن این سم ماندگار است.
البته راه هایی برای از بین بردن و کاهش این سم وجود دارد اما صنعتی بوده و راه هایی نیست که بتوانیم در منزل از آن استفاده کنیم.
ی ادامه داد:راه های صنعتی جهت تخریب سم آفلاتوکسین راه فیزیکی است به این معنی که از طریق فیزیکی مواد غذایی آلوده را جدا کرده و در زنجیره غذایی از ورود غذای آلوده به تغذیه دام و طیور جلوگیری کنیم که بیشترین عامل آن خود انسان هاست چرا که برای تغذیه دام از نان های کپک زده استفاده می کنند و این سم وارد بدن دام و نهایتا شیر شده و با استفاه از شیر و فرآورده های آن سم وارد بدن انسان می شود.
استفاده از انواع اشعه ها و مواد شیمیایی نیز از دیگر راه های کاهش سم آفلاتوکسین است.
این متخصص تغذیه افزود:همانطور که گفته شد روش های کاهش سم آفلاتوکسین خانگی نیست به همین علت بایستی از مصرف مواد آلوده خودداری کنیم البته استفاده از ادویه ها و چاشنی هایی مثل آویشن، دارچین، خردل و میخک که خاصیت ضد قارچی دارند تا حدودی سم آفلاتوکسین را از بین می برند.
عضوهیئت علمی دانشگاه علوم پزشکی شهید بهشتی گفت:در مطالعاتی که در ایران در بخش های مختلف صورت گرفته است به نوعی حضور سم آلوده را در مواد غذایی تایید می کند مطالعاتی که برروی شیر و فرآورده های آن در استان یزد انجام گرفت مشخص شد حدود یک سوم از شیرهای فرآوری شده و 20 درصد شیرهای خام عرضه شده بیش از حد مجاز به آفلاتوکسین M1 آلوده بوده اند و حتی در شیرهای استرلیزه میزان این سم سه برابر حد مجاز بوده است و مطالعاتی که بر روی پنیر سفید اصفهان و شهرکرد انجام گرفته مشخص شده 64 درصد به سم آفلاتوکسین آلوده بودند.
وی افزود:حتی مطالعه ای درخصوص مقایسه آلودگی با آفلاتوکسین شیرمادران مناطق شهری و روستایی انجام گرفت و مشخص شد این سم در شیرمادران شهری قابل اندازه گیری نبوده است اما این سم به میزان زیادی در شیر مادران روستایی به دلیل استفاده از شیرخام وجود دارد و این سم با استفاده از شیرخام وارد شیر مادر می شود و حتی به جنین زنان باردار از طریق بندناف انتقال پیدا می کند.
دکتر خدیجه رحمانی گفت:شرایطی که آلودگی مواد غذایی را افزایش داده و منجر به رشد سم آفلاتوکسین می شود حرارت و رطوبت و دما است و به همین دلیل در مناطق گرمسیری این مشکل بیشتر وجود دارد.
بیشترین مواد غذایی که احتمال آلوده شدن به سم آفلاتوکسین را دارند شیر و فرآورده های آن(از طریق حیوان آلوده)،سوسیس و گوشت های فرآوری شده، غذاهای فرآوری شده،خشکبار بخصوص مغزها از جمله گردو، پسته، فندق، بادام زمینی، دانه های روغنی مثل ذرت و پنبه دانه بیشتر در معرض آلودگی هستند همچنین در صورتی که آرد گندم و سویا در شرایط نامناسب نگهداری شوند احتمال آلودگی را دارند.
