باورهای غلط درباره شیر و لبنیات

بعضی افراد به دلیل پاره‌ای باورهای اشتباه که در مورد شیر و فرآورده‌های آن وجود دارد، از دریافت این مواد مغذی امتناع می‌کنند. این مقاله بر آن است تا با نگاهی علمی به رفع این باورهای اشتباه کمک کند.

شیر و فرآورده‌های آن از مهم‌ترین منابع تأمین ده‌ها مواد مغذی اساسی محسوب می‌شوند. پروتئین‌ها، کربوهیدرات‌ها، ویتامین‌های A ،B12 و ریبوفلاوین، عناصر معدنی کلسیم، فسفر، منیزیم، پتاسیم و روی از جمله این مواد مغذی محسوب می‌شوند.

سه وعده غذایی از فرآورده‌های لبنی، عموماً تأمین کننده کلسیم مورد نیاز بیشتر افراد است. هر وعده برابر با یک لیوان شیر، یا 200 گرم ماست یا 2 برش (40 گرم) پنیر است.

حذف فرآورده‌های لبنی از برنامه غذایی روزانه در واقع محروم کردن خود از بسیاری ویتامین‌ها و عناصر معدنی اساسی و مورد نیاز برای سلامتی است. بنابراین، با نگاهی تازه به ارزش‌های غذایی این مواد با ارزش، به حفظ سلامت خود کمک کنید.



باور اشتباه اول: «شیر سبب افزایش موکوس می‌شود.»
حقیقت: مطالعات متعدد نشان داده‌اند که شیر سبب تولید مخاط نمی‌شود. شاید در بعضی از افراد پس از مصرف شیر، لایه‌ای نازک به طور موقت در دهان و گلو حس شود که از بافت چربی طبیعی شیر ناشی شده و اغلب با مخاط اشتباه گرفته می‌شود. این لایه ضرری ندارد و در مدت کوتاهی بر طرف می‌شود.



باور اشتباه دوم: «شیر موجب آسم می‌شود.»
حقیقت: شیر ندرتاً می‌تواند به بروز آسم منجر شود. عوامل اصلی آسم عبارتند از: آلرژن‌هایی نظیر مایت‌ها، پولن‌ها و عفونت‌ها.

هر شخص (حتی اشخاص مبتلا به آسم) باید یک برنامه غذایی متعادل و سالم داشته باشد و توصیه می‌شود از مواد متنوعی شامل غلات، میوه‌ها و سبزی‌ها، مواد لبنی و گوشت‌ها استفاده گردد. طبق تحقیقات جدید نشان داده‌اند که فرآورده‌های لبنی به کاهش خطر علائم آسم کمک می‌کنند.



باور اشتباه سوم: «برای کاهش وزن باید از خوردن فرآورده‌های لبنی خودداری کرد.»
حقیقت: حتی در رژیم‌های غذایی که به منظور کاهش وزن تنظیم می‌شود باید فرآورده‌های لبنی از نوع کم‌چرب گنجانیده شود تا به رفع نیازهای اساسی غذایی کمک کنند.

دریافت کلسیم و سایر مواد مغذی اساسی با حذف شیر و فرآورده‌های آن به سختی قابل تأمین است. تحقیقات جدید نشانگر نقش مهم فرآورده‌های لبنی در مدیریت وزن و پیشگیری از اضافه‌وزن، به ویژه در نواحی شکم است.



باور اشتباه چهارم: «در صورت دریافت قرص کلسیم نیازی به استفاده از شیر نیست».
حقیقت: شیر منبع عالی کلسیم و پروتئین، کربوهیدرات، ریبوفلاوین، ویتامین B12، ویتامین A، پتاسیم، منیزیم، فسفر و روی است. قرص کلسیم همه این مواد مغذی را نمی‌تواند تأمین کند.

باور اشتباه پنجم: «کودکان زیر دو سال باید شیر کم‌چرب بخورند.»
حقیقت: شیر کم‌چرب برای کودکان زیر دو سال مناسب نیست؛ زیرا چربی شیر منبع مهم تأمین انرژی و نیز ویتامین‌های محلول در چربی و اسیدهای چرب ضروری برای این گروه سنی است.

با رشد کودکان و استفاده از سایر روغن‌ها و چربی‌ها در برنامه غذایی، چربی شیر اهمیت کمتری پیدا می‌کند.



باور اشتباه ششم: «افرادی که از لحاظ هضم لاکتوز مشکل دارند، نباید شیر و فرآورده‌های آن را مورد استفاده قرار دهند.»

حقیقت: حتی در صورت عدم تحمل لاکتوز نباید فرآورده‌های لبنی از برنامه غذایی حذف شوند. مشاهده شده است که اولاً افراد مبتلا به عدم تحمل لاکتوز حتی تا دو لیوان شیر را، مشروط به تقسیم در وعده‌های مختلف، می‌توانند تحمل کنند، ثانیاً پنیر و ماست به خوبی تحمل می‌شوند (پنیر فاقد لاکتوز است و باکتری‌های مفید ماست به هضم لاکتوز کمک می‌کنند).



باور اشتباه هفتم: «نوشیدن شیر موجب پیدایش سنگ کلیه می‌شود.»

حقیقت: شیر نقش محافظت‌کننده در تشکیل سنگ‌های کلیوی دارد که توسط املاح اگزالات ایجاد می‌شود. کلسیم شیر با اگزالات غذا پیوند می‌یابد و آن را برای جذب، نامناسب می‌سازد. در ضمن در مورد سنگ‌های کلسیمی نیز ثابت شده که مقدار حد پایین نیاز (یعنی 2 واحد لبنیات در روز) موجب ایجاد یا تشدید سنگ‌های کلیه کلسیمی نمی‌شود.


با توجه به آنچه گفته شد، این گروه با ارزش غذایی، یعنی شیر و فرآورده‌های آن، نباید بدون مشورت با پزشک و متخصص تغذیه حذف شوند.



لبنیات مصرف کنید و لاغر شوید - نجمه - 2012/08/08

بسیاری از افراد به اشتباه گمان می کنند مصرف لبنیات موجب اضافه وزن و چاقی می شود اما تحقیقات دانشمندان ثابت می کند این تصور نادرست است. طبق این تحقیقات افرادی که میزان کلسیم دریافتی آنها کم بوده و به دلایل مختلف از مصرف لبنیات اجتناب می کنند کمتر می توانند اشتهای خود را کنترل کرده و توده چربی در بدنشان بیشتر است.
همچنین منابع کلسیم لبنی مانند ماست پنیر یا شیر کم چرب در سوزاندن چربی های مضر در بدن بسیار موثر هستند.
