افراط در مصرف لبنیات مانع جذب آهن می شود

تهران - رييس انجمن علمي غذا و تغذيه حامي سلامت ايران گفت: اگر چه مصرف انواع لبنيات از نيازهاي ضروري بدن به نظر مي رسد، اما افراط در مصرف اين مواد، مانع از جذب آهن خواهد شد.
دکتر 'سید ضیاالدین مظهری' در گفت و گو با خبرنگار ایرنا با بیان اینکه لبنیات مصرفی باید بهداشتی و دارای شرایط استانداردی باشد، افزود: لبنیات از جمله شیر و سایر مشتقات آن باید از بدو تولد تا پایان عمر جزو مواد غذایی و مصرفی هر فرد باشند تا بخش قابل توجهی از نیازهای فرد را تامین کنند.
این متخصص تغذیه اضافه کرد: برخی والدین از اینکه فرزندانشان روزانه بیش از یک لیتر شیر مصرف می کنند، خشنود هستند درحالی که افراط در مصرف لبنیات و شیر علاوه بر کاهش جذب آهن بدن ، جایگزین سایر مواد غذایی و مورد نیاز بدن از جمله انواع ویتامین ها و اسید های امینه به ویژه در کودکان می شود و در روند رشد آنان اخلال ایجاد می کند .
وی ادامه داد: مصرف روزانه یک تا سه واحد لبنیات (هر واحد معادل یک لیوان ) از جمله شیر، ماست و دوغ در روز ضروری است و در مورد کودکان اگر این محصولات عاری از افزودنی باشد، بسیار بهتر است.
این استاد دانشگاه افزود: افراد باید از مصرف لبنیات پر چرب خودداری کنند زیرا علاوه بر افزایش کلسترول خون، موجب کاهش حالت ارتجاعی رگ ها می شود و در برخی مواقع افزایش فشار خون را نیز در پی دارد.
مظهری تصریح کرد مصرف لبنیاتی که بیش از 30 تا 40 درصد خامه به آنها اضافه شده است ، اگر چه لذیذ تر و خوشمزه تر به نظر می رسد اما درصد قابل توجهی از چربی آن در بدن ذخیره شده و موجب بروز بیماری های مختلف می شود.
وی گفت: کودکان می توانند از لبنیات پر چرب استفاده کنند اما بزرگسالان به ویژه افراد سالمند بهتر است از محصولات لبنی با چربی بسیار پایین از لبنیات پروبیوتیک استفاده کنند.
فراورده های پرو بیوتیکی حاوی باکتری های مفید هستند که پس از مصرف در روده ساکن می شوند و اثرات مفیدی در سلامتی انسان دارند. این باکتری ها برای بدن مفید هستند و از تراکم باکتری های مضر جلوگیری می کنند.
این متخصص تغذیه در مورد انواع شیرهای طعم دار یا شیرکاکائو ها گفت: ‌برخی افراد یا کودکان تمایلی برای مصرف شیر ندارند که در این صورت می توان از انواع شیرهای طعم دار برای تحریک آنان به مصرف لبنیات استفاده کرد.
وی تاکید کرد البته این مواد افزودنی باید مجاز باشد تا مشکلات دیگری برای آنان به وجود نیاورد.
مظهری در مورد مصرف شیرکاکائو نیز گفت: بهتر است این نوع شیر در منزل تهیه شود و برای هر برای یک لیوان، از نیم یا یک قاشق کاکائو استفاده کرد.
وی توصیه کرد برای تهیه شیر کاکائو بهتر است از کاکائویی استفاده شود که اوگزالات کمتری دارد زیرا این ماده مانع از جذب آهن یا سایر فلزات مفید برای بدن می شود.
وی اضافه کرد: استفاده از شیرهای طعم دار برای کودکان آسیب پذیر و دارای زمینه آلرژی توصیه نمی شود و با توجه به اینکه کودکان آینده سازان هر کشوری محسوب می شوند، بهتر است مادران از نخستین سال های تولد، ذائقه کودکان را به سوی طعم های مجاز و طبیعی سوق دهند تا کودک در سنین بزرگسالی گرایشی برای مصرف تنقلات نامناسب و غیر بهداشتی نداشته باشد.
وی تنقلات را به دو دسته مضر و مفید تقسیم کرد و گفت: مصرف تنقلات مضر از جمله انواع پفک ها و چیپس ها که حاوی مقادیر قابل توجهی نمک و چربی هستند، اصلا توصیه نمی شود.
رییس انجمن علمی غذا و تغذیه حامی سلامت ایران ادامه داد: اکنون در بسیاری از کشورهای جهان، مواد طبیعی و سالم چون انواع مغزهای خوراکی، کشمش ها یا میوه های خشک به عنوان تنقلات یا میان وعده در اختیار دانش آموزان قرار می گیرد.
به گفته مظهری ، در مغزها و خشکبارها انواع ویتامین ها و مینرال های حاوی روی ، آهن و سلنیوم وجود دارد و باید جایگزین مواد چرب و پر نمک شود.
