محققان مرکز رشد دانشگاه تربیت مدرس با استفاده از میکروب‌های خاص ماستی را تولید کردند که موجب پیشگیری از بروز برخی سرطان‌ها و کاهش وزن می‌شود.

مهدی آقاجانی مجری این طرح، محصولات فراسودمند یا عملگر را محصولاتی دانست که علاوه بر ارضای حس گرسنگی باعث پیشگیری از بیماری ها و بهبود روند بیماری ها می شود، گفت: این نوع محصولات از سال 1990 در دنیا به منظور افزایش امید به زندگی معرفی شدند.

وی افزود: در سایر کشورها بر خلاف ایران هزینه های درمانی از سوی بیمه ها پرداخت می شود که با افزایش سن جوامع هزینه های درمان افزایش یافت و شرکت های بیمه کاهش هزینه های درمانی را در گرو پیشگیری از بروز بیماری دانستند از این رو توجه جدی به تغذیه و محصولات غذایی شد.

آقاجانی لبنیات و نوشیدنی را از جمله مواد غذایی دانست که مطالعاتی زیادی بر روی آن انجام شده است و خاطرنشان کرد: ماست یکی از محصولات غذایی است که مطالعات زیادی روی آن انجام شده است به گونه ای که امروزه ماست پروبیونیک عرضه شده است.

مجری از تولید ماست عملگر حاوی اسید «لینولئیک کنژوگه» (CLA) خبر داد و افزود: این نوع اسید، چرب است که در بدن تولید نمی شود ولی از برخی دانه های روغنی و برخی فرآورده های نشخوارکنندگان چون گاو و گوسفند چون شیر قابل استحصال است در این پروژه تحقیقاتی تلاش شد تا به دو روش میزان این اسید چرب مزدوج را در محصولات لبنی افزایش دهیم.

آقاجانی اظهار کرد: اسید لینولئیک مزدوج به خوراک دام را یکی از این روش ها ذکر کرد.

وی افزود: روش دوم، اضافه کردن این اسید چرب به شیر است که در این پروژه از این روش استفاده شد.

مجری این طرح خاطرنشان کرد: در این پروژه با اضافه کردن روغن آفتابگردان و استفاده از برخی میکروب های خاص ماست عملگر حاوی اسید مزدوج (CLA) با خواص دارویی تولید کنیم.

محقق این طرح به جزئیات میکروب های استفاده شده در این ماست اشاره کرد و افزود: به صورت طبیعی برای تبدیل ماست به شیر میکروارگانیزم هایی در آن موجود است و پس از رسیدن به درجه مطلوب میکروب ها فعال می شود و موجب تبدیل شیر به ماست خواهد شد. این میکروب ها باید دارای شرایط خاصی باشد که برای این طرح از خارج وارد کردیم.

وی با اشاره به خواص دارویی این ماست، اظهار کرد: این ماست برای پیشگیری از بروز سرطان پروستات و بهبود بافت قلب تولید می شود ضمن آنکه در افراد سنگین وزن موجب سوختن چربی و در نهایت کاهش وزن می شود.

آقاجانی با تاکید بر اینکه ماست عملگر تولید شده در رنگ و طعم آن تغییر حاصل نشده است، افزود: برای ارتقای خواص این ماست می توان میزان اسید لینولئیک موجود در آن را دو برابر میزان فعلی کرد ولی تغییراتی در طعم آن ایجاد خواهد شد.
